INGREDIENTS
• 10 lbs ground pork • 1 ½ quarts rice vinegar • 1 ½ quarts water • 3 cups sugar • 4 tbsp. salt

INSTRUCTIONS • 1 ½ qts carrots (thinly sliced) • 1 ½ qts red onion (thinly sliced) • 3 tbsp. garlic (minced) • ¼ cup ginger (grated) • 1 cups soy sauce (low sodium) • ¾ cup brown sugar • 2 tbsp black pepper • 50 WG hamburger buns • 1 cup mayonnaise • 12 cucumbers (sliced) • 3 cups cilantro (chopped) • 8 jalapeños (thinly sliced)

1. Preheat skillet to 375°F. 2. Prepare the pickled vegetables: In a bowl, combine rice vinegar, water, sugar, and salt. Heat on stove top until boiling, and stir until the sugar dissolves. Remove from the heat, and add the julienned carrots and red onion to the mixture. Let sit for at least 30 minutes. 3. In a mixing bowl, combine the ground pork, minced garlic, grated ginger, soy sauce, brown sugar, and black pepper. 4. Mix the ingredients until well combined, being careful not to overmix. 5. Divide the mixture into 3 oz portions and shape them into patties. 6. Cook the pork patties in the skillet for about 4-5 minutes on each side until they
are fully cooked to an internal temperature of 160°F, and have a nice crust. 7. Toast the hamburger buns in the oven for 2-3 minutes. 8. Spread a layer of mayonnaise on the bottom half of each bun, and place the cooked pork patty on top. 9. Add sliced cucumber, pickled vegetables, fresh cilantro leaves, and jalapeños. Top with the other half of the bun.
