“I feel fortunate for the opportunity to travel to Oaxaca, Mexico, and have a real immersive experience in the authentic traditional Mexican cuisine and pre-contact cuisine; the quality of ingredients and cooking methods are unique from that region and what makes all that delicious food memorable is the people from Oaxaca, the love and pride for the cuisine is part of who they are and is a tradition that is passed from generations.
