Peanut Butter Chocolate Chip Oatmeal
Peanut butter cup for breakfast? It’s full of fiber, protein, and goodies that you and your kids will eat up.
I love a good hearty bowl of oat- meal to start the day. Oatmeal is a whole grain that is packed with fiber and protein. When you cook it in milk, you get even more protein that makes it a great option to start the day. I usually make my oatmeal with flaxseed for added Omega-3 fatty acids and additional fiber. You can also try steel cut oats which are a great source for insoluble fiber. Both soluble and insoluble fiber is needed for good digestive health. I’m not a candy or candy bar type of girl. You won’t tempt me with that, but if you have that chocolate and peanut butter cup, it’s hard for me to resist. My department will have monthly office meetings and the team leader will place chocolates all around the room for us to snack on. Just evil! I can resist until we’re talking about the combination of chocolate and peanut butter. Recreating this fun candy with oat- meal replaces the guilt with nutri- ents needed to sustain me through long meetings and long days.
