Developing recipes for schools re- quires balancing authenticity with practicality. Every recipe developed through the Ohio Proud Recipe Initiative must: • Meet USDA meal pattern require- ments. • Be practical for large-scale school production. • Utilize ingredients that are readily available, with an emphasis on Ohio- grown products when possible. • Appeal to students while main- taining the character of the original dish. That balance allows school districts to introduce students to new cuisines without creating recipes that are diffi - cult to prepare or serve in a cafeteria setting.

THE IMPORTANCE OF TASTE TESTING

Our team welcomed students and guests during the Chicken Sugaar taste-testing event, where feedback helps determine whether recipes are ready for school cafeterias. Once development is complete, the next step is letting students decide. Student taste testing is one of the most valuable parts of the recipe develop- ment process. Using a simple digital survey, students rated the recipes im- mediately after sampling them. Their feedback provides meaningful insight into flavor, acceptance, and overall ap - peal before recipes are finalized. Taste testing also creates an opportun- ity for students to experience foods they may have never tried before. For

some students, these recipes may feel familiar. For others, they offer an intro - duction to another culture through one of the most universal experiences: sharing a meal.
