1. To cook Woodles: bring water to a boil, add noodles and cook for 3-4 minutes. Do not overcook. Noodles should be bouncy, not stiff or limp. 2. Combine all vinaigrette ingredients, aside from the oil in a blender. While blender is running, add the oil in slowly (can use a hand whisk if blender is not available). 3. Pour vinaigrette over the Woodles and toss to coat the Woodles. 4. Combine the cabbage, edamame, and carrot matchsticks. 5. To serve, take 1 ¼ cup of vegetable mixture with 1 cup of vinaigrette Woodles.
